Add the following ingredients into a bowl and mix together. Season with salt and pepper if needed.

  • 250g pack of cooked lentils (e.g. Merchant Gourmet)

  • 2 medium courgettes, made into ribbons using a potato peeler

  • 2 handfuls of fresh mint

  • 2 avocados, chopped

  • 1 large handful sunflower seeds

  • Juice of 4 limes

  • 4 tablespoons olive oil

Additions / variations

  • Add a handful of pomegranate seeds for extra colour and crunch

  • If you’d rather use a different variety of seed or nuts, you can do. Chopped walnuts or pumpkin seeds would work well.
