Homemade Healthy Mini-Scones

This is my homemade healthy mini-scone recipe – I made these with my children as they are a great healthy snack or dessert. We made kiwi and apple jam to spread on top of the scones. I decided to make a mini version of scones that are ideal for little tums, as children require smaller portions than adults. I have also used a lower fat spread instead of butter to make them healthier. These scones would make a good snack for people with diabetes. They can also be made suitable for coeliacs by using a gluten-free flour instead of the usual wheat-containing self raising flour. These scones only take around 25 minutes to make (or a little longer if you are using kiddy ‘helpers’!). Before you start, set the oven on gas mark 7 (220 degrees C), and grease 2 baking trays.

  • 225g self raising flour
  • 1 1/2 teaspoons baking powder
  • 50g low fat (light) olive spread
  • 25g sugar
  • 1 egg
  • Approx 120ml semi-skimmed milk

  • Measure the flour and baking powder into a bowl, and add the low fat spread. Using your fingers, rub the flours and spread together until it ressembles fine breadcrumbs
  • Stir in the sugar
  • Mix the egg and milk together with a fork, then add this to the flour/spread mix
  • Mix into a soft dough and then knead lightly on a floured board
  • Roll out the dough to 1/2 inch thickness
  • Using a small fluted cutter, cut out the scone shapes and place on the prepared baking trays. I used a 1 3/4 inch fluted cutter and got 24 scones from this
  • Brush the scones with a little milk
  • Place the baking trays in the pre-heated oven for about 12 minutes, or until golden brown
  • Allow to cool on a wire rack
